Magic Muffins
Shredded carrots, apples and sweet potatoes, a bit of banana - but not enough for it to taste bannana-ish (that is a really bad thing, according to my 6 year old), and a chia egg holds it all together. Don't tell anyone it's vegan, they don't need to know!
I have had the most pickiest eaters devour these muffins, having no idea there was fruit and vegetables inside. And they pass the theme park test! I bring them for my kids when we go to Disney and Universal. They hold together nicely, which is a miracle for gluten free. Throw in some chocolate chips and they are even better! Goes great with a cup of coffee, which was very important to my grandmother.
Ingredients
- millet flour - 1/3 cup
- coconut flour - 1/3 cup
- tapioca flour - 1/3 cup
- pecan meal - 1/2 cup
- baking soda - 1/4 tsp
- sweet potato, shredded - 1/3 cup
- apple, shredded - 1/3 cup
- carrot, shredded - 1/3 cup
- chia seed - 1 tbsp
- coconut oil - 1/4 cup
- banana - 1/3 cup
- coconut milk - 3/4 cup
Instructions
- Combine the millet, coconut, and tapioca flour with the bakind soda.
- Make the chia egg and let thicken
- Add the mashed banana, coconut oil and chia egg.
- Mix in shredded potatoes, apple and carrot
- Stir in pecan meal
- Add milk, stir to combine
- Bake at 350 for 45 minutes
