Ingredients
- Water or Stock - 4 cups
- Lentils - 1 1/5 cups, rinsed and drained
- brown rice - 3/4 cup
- Onions - 2 large, chopped
- Olive Oil - 2 tbsp
- McKay's chicken seasoning - 1 tbsp
- Oregano - 1 tsp
- FOR THE DRESSING
- minced garlic - 1-2 cloves
- fresh lemon juice - 1/4 cup
- olive oil - 1/4 cup
- honey - a squeeze
- Salt & Pepper - to taste
Instructions
- In a large pot bring water or stock to boil.
- Add lentils, rice, onion, oil, and return to boil. Reduce heat, cover and simmer for 45 minutes.
- Serve over shredded lettuce with desired toppings: Diced tomatoes, bell peppers, radish, sliced olives, cheese, cucumbers, etc.
FOR THE DRESSING
- whiz it all up with a small food processor
- You may want to make 4 times the amount, as this absolutely makes the dish!
